I have a 2-quart pan and am delighted with it. The temperature control is exactly what everyone says it is; the copper-ware adjusts perfectly. I saute vegetables for my pasta before shoving them in to my pasta bowl. I have 'browned' chicken, lamb and mutton. Depending on the oil content, this can easily be converted in to a fry pan.
It's very durable. I was a little thrown off at the color change on the outside, but that's ok w/ me. I used the Mauviel Copper Polish once, and it works wonders. Going forward, I'll use that polish once in 6 months or so. The stainless steel interior is easy to clean and maintain.
Be careful about what you cook/heat up in it. If you're not willing to put the right amount of water/oil/dressing, then the contents will stick and you'll have a hard time cleaning. Remember that it isn't 'non-stick' cookware.
I can't recommend this enough. Save, buy, enjoy! And I certainly will take care of mine like it is my daughter's inheritance.
